Summer Inspired Zucchini Noodles


On my rare days off one of my favorite things to do is pack lunch, slap on some sunscreen, grab a good book and head to the beach.  The usual salad, turkey wrap, or Greek yogurt gets old pretty quickly.  This super easy lunch is perfect for the beach because it can be served at just about any temperature and still taste super yummy!  Add some grilled shrimp or chicken if you are looking to serve this as a heavier dinner option with a bit more protein!

  • 4 zucchini- spiralized
  • 1 ear of corn, with corn removed
  • 1/3 cup feta cheese
  • 1/4 cup cilantro (or fresh parsley if cilantro isn't your thing!)
  • 1 tbsp. olive oil
  • 1 tbsp. garlic powder
  • 1/2 an avocado
  • Servings: 2
  • Difficulty: easy


  • Heat the olive oil over medium heat and add the garlic powder and zucchini noodles
  • Let the zucchini noodles cook until tender
  • Add the fresh corn and cook another 3-5 minutes, until tender but slightly crisp still
  • Remove from heat and toss with feta cheese and fresh cilantro
  • Serve hot or cold with fresh avocado slices on top
