(Almost) Carb-less Chicken Parm

I had no intentions of posting this low carb dinner (hence the crappy iPhone photo). I was showing off my yummy low carb chicken farm; when instagram exploded with likes and recipe requests; it seemed only fair to share.  I feel funny even calling this a recipe because it is so easy, like seriously; I think cleaning the pan was more exhausting than actually piecing together this dinner.  However it is super low carb and has a whopping 42 grams of protein a serving!  So now that we have established that even a monkey can make this low carb chicken parm I guess its time to share the embarrassingly easy recipe

Ingredients

  • 8 oz of chicken breast
  • 1/2 tbsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 cup your favorite sauce (yes, jarred is okay)
  • 1/3 cup of low moisture, part skim, shredded mozzarella cheese
  • 1/4 cup of shredded parmesan cheese
  • Servings: 2
  • Difficulty: easy

Directions

  • Place chicken in a baking dish, I used an 8x8
  • Top with the garlic powder, oregano, and basil
  • Let sit for 30-45 minutes
  • Add the sauce
  • Bake at 375 degrees for 30 minutes
  • Top with the mozzarella and parmesan cheese and broil for 3 minutes, until cheese becomes bubbly and slightly brown
  • Cover with aluminum foil and let sit for 15-30 minutes before serving
  • Serve over your favorite pasta, zucchini noodles, or in between crusty bread for a sandwich!
