Avocado Hummus Tacos

Sometimes people enter our lives and its hard to imagine that you have only known them for a short amount of time.  This pretty much sums up my relationship with my friend Cassandra.  After only hanging out a few times, she is sleeping over my house, we are giving each other boy advice, and planning vacations together.  Talk about a whirlwind friendship.  I seriously feel like I have met my twin!  Like me, Cassandra is health conscious and even has a badass blog, Lean Life Inspire.  Us “blonde bloggers”  decided to collaborate in the kitchen to make some yummy and nutritious meals.  These super easy tacos are the perfect recipe for an afternoon snack or when paired with a leafy green salad, the perfect dinner! We think the hearty corn tortillas, which have a lower glycemic index than even whole wheat tortillas are what really make these little pockets of hummus and avocado even yummier! Ingredients

  • 4 corn tortillas
  • 1 medium avocado
  • 1/4 cup of garlic hummus
  • 1/2 cup of reduced fat cheddar cheese, shredded
  • Servings: 2
  • Difficulty: easy

Directions

  • Mash the avocado and hummus together
  • Spread 1/4 of the mixture onto each tortilla and top with 1/4 of the cheese
  • Fold in half and place on a greased pan over medium-high heat
  • Cover with a lid or oven safe dish and let cook  for 2-3 minutes, until golden brown, flip and cook another 2-3 minutes, until cheese is melted and tortilla is golden brown on each side
  • Continue with remaining tortillas
