Cauliflower Crust Pizza

I am a sucker for a good low carb alternative, I eat my zucchini as noodles, rice my cauliflower and even make flourless cookies that can knock your socks off.  Low carb is a challenge but one I don’t mind trying to navigate.  When it comes to carbs the one food I have a hard time making sacrifices for is pizza.  Crispy, crunchy, golden crust topped with melted cheese, there may be nothing better in this world than perfect pizza.  That being said, I have discovered a new concept and created the ultimate low carb option to one of my favorite guilty pleasures, enter the cauliflower crust pizza.  I know, I was skeptical too, and sometimes this recipe is a bit stinky but if you can get past the smell of steamed cauliflower I promise you a perfect addition to your low carb arsenalt of recipes.  Don’t believe me? Ask the staff of WTNH.  When I made this pizza for a recent cooking segment, it was literally gone in less than a minute.  My friend, Kortney, joked that we should have filmed them devouring it instead of my cooking segment becuase it was pretty entertaining to watch and such a testiment to how delicious this recipe is!

Ingredients

  • 1 head of cauliflower
  • 3/4 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 eggs
  • 1 tbsp basil
  • 1 tbsp oregano
  • 1/2 tbsp garlic powder
  • 1 tsp salt
  • Desired Toppings
  • Servings: 4
  • Difficulty: easy

Directions

  • Using a food processor's grater adaptor "rice the cauliflower" (No food processor? You can use a cheese grater and manually do the work...and work those biceps too!)
  • Microwave the riced cauliflower for 10 minutes
  • Wrap a dishcloth around the cauliflower, place  few heavy pots and pans over the cauliflower and let sit for 15 minutes, this helps remove any excess moisture
  • In a mixing bowl, combine cauliflower with remaining ingredients, until a dough forms
  • Place the dough on a greased cookie sheet and pat down to create a flat, pizza shape
  • Bake at 450 degrees of for 15-20 minutes, until golden brown
  • Remove from the oven and top with desired toppings
  • Place under the broiler for 3-5 minutes until cheese is golden brown
  • Let cool for 10 minutes before enjoying!
