Spinach and Feta Frittata

In my early post graduate days I think it is safe to say a chunk of my pay checks were spent on Starbuck’s spinach feta egg white wraps.  These whole wheat wraps loaded with tons of protein and even more flavor are AHMAZING! Whether it was for a quick dinner on my way into a night shift, a post workout snack, or a traditional breakfast I was addicted to these babies.   I would even make trips to Starbucks to buy one of these wraps without even ordering coffee.  One of my resolutions for 2015 is to stick to a budget, spend less money on small things that eventually add up quickly, like my guilty Starbucks pleasure.  I rolled up my sleeves and got creative in the kitchen; adding the bold flavors of my favorite drive thru indulgence for a fraction of the price and calories, what resulted was equally as AHMAZING!

Ingredients

  • 4 whole eggs
  • 8 egg whites
  • 1/2 cup of sauteed spinach
  • 1/4 cup of finely chopped sundried tomatoes
  • 1/2 cup of feta cheese
  • Servings: 4
  • Difficulty: easy

Directions

  • Whisk eggs together
  • Add remaining ingredients to the eggs and stir together until well combined
  • Pour into a greased pie dish or 8x8 baking sheet
  • Bake at 400 degrees for 35-40 minutes, until center is set and fritatta is slightly golden brown
