Bacon Cheeseburger Soup

Bacon Cheeseburger Soup?!?  Yes, its a thing;  a wonderful heavenly thing sent from the soup gods to help make this winter a bit more bearable.  For the few minutes you are scarfing down this soup, everything in the world is okay, even with near arctic temperatures outside.  The only way to describe this recipe is dubbing it the title “The King of the Comfort Foods”; and lets be real, nasty ass weather like this calls for some serious comfort food!

Ingredients

  • 2/3 cup of chopped onion
  • 1 lb of 93% lean ground beef
  • 1/2 cup shredded extra sharp cheddar cheese
  • 1 1/2 cups of chicken stock
  • 8 strips of center cut bacon, chopped
  • 6 oz of light beer
  • 1/2 cup of heavy cream
  • 4 oz of plain 0% Greek yogurt
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1/2 tbsp of mustard
  • Servings: 4
  • Difficulty: easy

Directions

  • Sauté the bacon and onions over medium heat, until the onions become transluscent
  • Add the ground beef and cook until browned, being sure to break apart when cooking
  • Add the chicken stock, beer and heavy cream and bring to a boil
  • Slowly stir in the cheese
  • Add the Worcestershire sauce, ketchup and mustard and bring to a simmer
  • Let simmer for 30 minutes, until soup thickens
  • Stir in the Greek yogurt and let simmer for another 5 minutes
  • Enjoy!
