No Bake PB Chocolate Coconut Truffles


What is it about the word balls that suddenly makes something seem so inappropriately funny?  Lets be real, saying how much I love popping this PB balls in my mouth as I leisurely watch TGIT definitely does not sound like a blog I want to necessarily write about.  For that simple reason, this recipe, which used to be PB Chocolate Balls has been appropriately renamed as “truffles”.  I must say,  these little babies are my new favorite snack.  When my late night sweet tooth starts to yell at me, my day is a bit more insane than usual, or the dreaded post Halloween cravings sink in, these balls of peanut butter, coconut, and chocolate chip truffles are the perfect cure for just about anything.  With tons of fiber and a kick of sweetness from the chocolate and coconut, these snack sized treats not only help fill you up but knock any sinful craving out of the ball park!

  • 1/2 cup natural peanut butter
  • 1/4 cup shredded coconut flakes
  • 1 cup rolled oats
  • 1/4 cup honey
  • 1/3 cup mini dark chocolate chips
  • 1/4 cup ground flax seed
  • Servings: 12-16
  • Difficulty: easy


  • Combine ingredients in a large mixing bowl
  • It will take a few minutes but stir until all ingredients are combined
  • Place on a wax paper lined plate (or spray a plate with cooking oil)
  • Roll the dough in to small sized balls and place on the plate, yielding about 18-24 balls
  • Refridgerate for at least 2 hours to allow truffles to form
  • Store in airtight container in refridgerator for up to a week
