Parsnips French Fries


I once dated a guy who told me my smile was his kryptonite, you can guess what kind of guy he ended up being… My kryptonite?  French fries!  I love them and hate how horribly bad for me they are, but put a pile i front of me and even this health nut can’t help herself.  When I find myself craving some crispy, fired, carbohydate loaded indulgence, I always turn to a more guiltfree option, parsnip fries! With a similar crunch, these yummy strips become slightly sweet  and carmelized and are oh so craveworthy once baked.

*Incase you aren’t sure what a parsnip is, it looks like a white carrot*

  • 8-10 parsnips
  • 2 tbsp olive oil
  • salt to taste
  • Servings: 4
  • Difficulty: easy


  • Peel the parsnips and slice into french fry sized strips
  • Toss with the olive oil and spread across a baking sheet
  • Generously sprinkle with salt
  • Bake at 400 degrees for 40 minutes, flipping the parsnips halfway through , until light brown and crispy on the outside
  • Let cool for 5 minutes before enjoying
