Tropical Granola


I always promise no crunchy granola recipes on this blog.  Well…promsie broken!  Sorry guys but this crunchy tropical granola is way too heavenly not to share.  In fact, this granola was so addictive, I had to give it away to friends and families to stop myself from eating it all.  I love granola! My only problem with this food which is often mistakenly given a healthy label is that the store bough variety is far from healthy.  There is often nothing bare or naked about the sacks of taosted oats lining the market shelves.  With simple, pure ingredients like honey and coconut oil, this recipe boasts a low sugar content compared to its shelved cousins.  My favorite part? The slight zing from the lime zest, an unexpected surprise amongst the sweet pineapple and rich coconut.  Sprinkled over yogurt, by the fistful on a hike, or straight out of the tupperware at 2AM (something I may have done :-/) this granola is one that will disappear rather quickly.

  • 1/3 cup of honey
  • 1/4 cup coconut oil
  • zest from 1 lime
  • 1 cup of dried pineapple, chopped
  • 1/2 cup of unsweetened organic shredded coconut
  • 3 cups of rolled oats
  • Servings: 16

  • In a small sauce pan, melt the coconut oil over medium high heat, stir in the honey
  • Continue to stir until melted and combined
  • Add the lime zest and stir
  • Add the remaining ingredients in a large mixing bowl
  • Pour the honey and coconut oil mixture into the mixing bowl and stir until the oats are lightly covered with the oil and honey
  • Place on a baking sheet lined with parchment paper or aluminum foil and spread into a thin layer
  • Bake at 375 for 12-15 minutes, until oats are golden brown and toasted
  • Let cool for 15 minutes
