The Meatless Meatball

Meatballs without the meat? I can already see my Italian grandfather rolling his eyes. Sorry Pa, but this recipe is filled with the nutritional goodness and happens to rival the taste of the beloved meatballs served at our Sunday dinners. When I first made these I seriously could not stop eating them! The Italian in me was instantly hooked and my inner health freak may have been doing cartwheels with every bite. I recommend these babies over quinoa pasta and a generous serving of my homemade marinara sauce (recipe here!)

Ingredients

  • 1 14-oz. pkg. ground-beef-style soy (I used LightLife Brand, it comes in a tube)
  • 1/3 cup of whole wheat bread crumbs
  • 2 egg whites
  • 1/4 cup of grated Parmesan
  • 2 tsp of garlic powder
  • 1 tbsp of Italian seasoning
  • 1/2 tsp salt
  • cooking spray
  • Servings: 4
  • Difficulty: easy

Directions

  • In a medium mixing bowl, add all ingredients and combine (I use my hands for this)
  • Once combined, form the "meat" mixture into small, tablespoon sized balls and place on a greased cookie sheet
  • Once all the balls are formed, spray with more cooking spray
  • Bake at 400 degrees for 30 minutes, until crunchy on the outside and warmed through on the inside
  • Salt to taste and enjoy!
