Cheesy Baked Grains

If you know me, even as an acquaintance, you know my love for quinoa. Leave it to to me to date the only person on this planet who has no idea of the wonders of this superfood… Enter:  my boyfriend, Chris, the innocent, all American boy who simply texted me back “‘???” when I told him I was making baked quinoa, bulgar and cheese for our din, din.  It took all I had not to text him back:  “you’re girlfriend is a healthy food blogger, how has 3 months gone by without this amazing grain being brought up?!?”  (Its a good thing he is so cute!) Needless to say we had quite a discussion over dinner that night about the wonders of this powerfood.  And a few weeks later, Chris informed me the latest Jeopardy questions involved quinoa…looks like dating me paid off!

Ingredients

  • 3/4 cup of uncooked quinoa
  • 3/4 cup of uncooked bulgar
  • 1/4 cup of half and half
  • 1/3 cup of skim milk
  • 8 oz. of very sharp cheddar cheese, shredded
  • 1/4 cup of whole wheat, seasoned bread crumbs
  • 1/8 tsp of salt
  • 1/4 cup of freshly grated parmesan cheese
  • Servings: 6
  • Difficulty: easy

Directions

  • Cook quinoa and bulgar according to package directions
  • Once the grains have roughly 10 minutes left of cooking time, in a medium saucepan and the half and half and milk, bring to a simmer with the salt, once simmering add the cheddar cheese in small increments, stirring to melt and combine the cheese with the milk and half and half
  • When done cooking, drain the grains in a fine strainer
  • Once all the cheese is added and a smooth sauce forms, thick enough to coat a spoon add the cooked grains and combine until it is coated with the cheese sauce
  • Place in a greased 8x8 baking pan and top evenly with breadcrumbs and parmesan cheese
  • Cover with foil and place in a 350 degree oven for 30 minutes
  • Uncover after 30 minutes and place under the broiler for 3-5 minutes or until top is browned
  • Let sit for 15 minutes and serve
