Green Monster Chili

Chili is served!  What I love most about this hearty meal is that you can literally throw any protein, veggies, and beans into a pot and are guaranteed a pretty damn good meal (unless you do something catastrophic of course!)  Safe to say this recipe was a result of a very tired chef throwing the contents of her freezer into a big pot and letting it simmer away while a pre-night shift nap happened.  Maybe a fire risk?  But at least firefighters are known for their chili love!

Ingredients

  • 2 lbs of extra lean ground chicken
  • 1/2 cup of chopped onions
  • 1 cup of chopped green pepper
  • 2 tbsp cumin
  • 1 tsp crushed red pepper
  • 2 cups of chopped broccoli, fresh or frozen
  • 28 oz of crushed tomatoes
  • 4 cups of low sodium chicken stock
  • 15 oz of canned black beans
  • 1/2 cup of frozen corn
  • 4 cups of frozen, chopped spinach
  • 1 cup of frozen peas
  • Servings: 8
  • Difficulty: easy

Directions

  • Over medium heat, saute the onion, pepper and spices in cooking spray until they become translucent
  • Add the crushed tomatoes and chicken stock
  • Add the remaining vegetables and bring to a boil, once boiling reduce to a simmer
  • Let simmer, covered for 4-6 hours, stirring occasionally
  • Top with your favorite toppings, I fresh like avocado!
