Kale and Truffle Baked Eggs


I have recently made the most wonderful discovery at Trader Joe’s.  For the mere price of $5.99, you can leave the store the with most aromatic, decadent black truffle flavored olive oil.  If you have yet to experience the wonder of the truffle, run, don’t walk to Trader Joe’s and grab yourself a bottle of this stuff, it is seriously life changing.  I have been drizzling it over my salads, into soups, and on toasted Ezekiel bread; the rich flavor of this oil automatically makes the simplest recipe close to gourmet.  With a newly acquired addiction to this stuff, I decided to try vamping up my breakfast.

  • 4 eggs
  • 1/2 cup of cooked kale, chopped
  • 4 links of turkey sausage, chopped
  • 4 tbsp. of Parmesan cheese
  • 4 tbsp of black truffle flavored olive oil
  • cooking spray
  • Servings: 4
  • Difficulty: easy


  • Spray each ramekin with cooking spray
  • Crack an egg in each ramekin and top with even amount of chopped kale and sausage
  • Top with Parmesan cheese and bake in a 400 degree oven for 20 minutes, yolk should remain slightly runny
  • Drizzle with truffle oil.  I like mine with toasted bread for dipping!
