Pulled Buffalo Chicken

Life has been crazy.

I will be the first to admit that I secretly love having a a jam-packed schedule, however these past few weeks (and weeks to come) have crossed the line. With early mornings and late nights I have inevitably been left with a horrible cold, a new found love for my planner, and barely any time to cook. My freezer stock of veggie burgers has officially run out. With a short break in the midst of trying to juggle fitness, work, and grown up priorities, I was able to the world’s most comforting, simplest dinner cooked all day in my slow cooker (did I mention its perfect for football Sunday!)

Ingredients

  • 1 lb. of boneless, skinless, chicken breast
  • 1/2 cup of non-fat Greek yogurt
  • 1 1/2 cups of buffalo sauce (I used Frank's Red Hot)
  • Servings: 4
  • Difficulty: easy

Directions

  • Combine all ingredients in the slow cooker
  • Cook on low for 6 hours
  • Once chicken is cooked through, remove and shred with a fork
  • Return to the crock pot and let cook for another 30-45 minutes on low
