BLT Pasta


A few weeks ago, I had my sister and our friend Peter over for dinner before they headed back to college. Well over six feet tall, Peter towers over my small 5’3″ stature and definitely needed a little more than my usual light dinners. With tons of smokey bacon flavor laced throughout, is definitely a man’s meal. Still loaded with green leafy’s, vegetables, whole grains, and omega 3’s this meal packs a nutritional punch.

  • 1 box of whole wheat pasta
  • 1/2 lb of center cut bacon
  • 1 large tomato, chopped
  • 4 cups of romaine lettuce, shredded
  • 1 medium avocado
  • 1 1/2 tsp of salt
  • 2 tbsp. fresh chives, chopped
  • Servings: 6
  • Difficulty: easy


  • Cook the pasta according to package directions
  • While the pasta cooks, cook the bacon in a medium frying pan
  • Drain the bacon and place in a good processor with the avocado and salt
  • Pulse until avocado forms a thick dressing
  • Place the chopped tomato in the frying pan and cook until warm
  • Once pasta is cooked, drain and toss with tomatoes and stir in avocado and bacon dressing
  • Finally, toss the shredded lettuce and chives
