Avocado Banana Cookies

Feeling sneaky?  These are the cookies for you! I am not sure if it was a dream I had, an advertisement I saw, or a slight mention from a friend but my typical craving for salty foods, has transitioned into a strong sweet tooth.  Trying to place a detour on the road to guilt, which typically goes hand in hand with baking, I created these cookies showcasing one of my favorite superfoods…the avocado.  Concerned for my judgment skills?  Trust me these cookies are definitely a new favorite!

Ingredients

  • 2 ripe bananas
  • 1 ripe avocado
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1 tsp. of vanilla extract
  • 2/3 cup ground flax seed
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 cups of quick oats
  • 1/4 cup of chopped walnuts
  • 1/2 cup of dark chocolate chips
  • Servings: 24 cookies
  • Difficulty: easy

Directions

  • In a large mixing bowl, add the bananas, avocado, olive oil, honey, and vanilla, mix over medium speed until bananas and avocados are mashed
  • Add the remaining ingredients and mix until a dough forms and all ingredients are evenly mixed together
  • Place rounded teaspoons of dough onto a greased cookie sheet
  • Bake at 350 degrees for 15 minutes
  • Let cool for another 15 minutes and enjoy!
