Superfood Bulgur Salad

After years of failed attempts, this past weekend my family and I had finally made the trip up to Saratoga Springs for the Travers Stakes.  It was so wonderful to spend time with my soon-to-be-relocating parents and baby sister.  Between the majestic beauty of the horses, festive hats, and the still alive tradition of horse racing, it was a day to be remembered.  We left with our wallets a little wider (thanks to my pare1235195_10200608794277370_632833500_nnt’s bet on the winning horse) but it is safe to say our waistlines may have increased a little too.  Between the fried macaroni and cheese, freshly popped popcorn, fried chicken it was hard to follow a clean diet.  This bulgur salad, loaded with superfoods made for the perfect detox after a weekend of indulging.

Ingredients

  • 1 cup of bulgur
  • 4 cups of fresh kale
  • 2 carrots, peeled
  • 1 medium onion
  • Juice from 1 lemon
  • Dressing:
  • 1 ripe avocado
  • 1 tbsp. of apple cider vinegar
  • 1 tsp. of oregano
  • 1/2 tsp. of red pepper flakes
  • Juice from 1 lemon
  • Servings: 8
  • Difficulty: easy

Directions

  • Place bulgur in a medium saucepan and cover with 3 cups of water and the juice from the lemon
  • While bulgur cooks, using a food processor, pulse the kale, carrrot, and onion until finely minced
  • Place in a large mixing bowl
  • Place the dressing ingredients into a blender or food processor and blend until a thick dressing forms
  • Once bulgur is cooked, place into mixing bowl with vegetables and toss with the dressing
  • Serve room temperature or cold
