Chicken Cordon Bleu Cupcakes


Sometimes my fridge is loaded with random foods.  Sometimes I immediately know how to bring these ingredients together into a pretty bad ass recipe, sometimes my creativity works against me into an epic food fail. This recipe definitely had a bad ass turnout that was more than impressive.  The rich flavors of chicken cordon bleu in cupcake form, how can you go wrong?

  • 6 oz of boneless, skinless chick breast
  • 8 oz of turkey ham
  • 1 tbsp. of olive oil
  • 1 tsp of dried thyme
  • 2 eggs
  • 1/4 cup of whole wheat flour
  • 1/3 cup of grated Parmesan cheese
  • 9 tsp. of whole wheat, flavored bread crumbs
  • Servings: 9

  • Slice the chicken and ham into small, bite sized pieces
  • Saute the chicken and thyme in the olive oil over medium, high heat
  • Once cooked through, add the ham and saute for 5 additional minutes
  • Place the chicken and ham in a mixing bowl, add the eggs, flour, and cheese
  • Stir until a batter forms
  • Place the batter into lined muffin tins
  • Top each with a teaspoon of breadcrumbs
  • Place in a 400 degree oven for 15-20 minutes, until batter is set and golden brown
