Greek Yogurt Honey Chicken Salad


The post graduate lifestyle definitely has its up and downs. Ups:  nights free of homework and studying, Sunday brunch with friends, and the freedom that comes with independence.  Downs:  lack of sleep, laundry, and bills, bills, bills.  I have always thought of my self as a thrifty in the kitchen; after all, this blog is all about creating recipes for little budgets and pride myself on recycling one recipe into another.  One of my favorite grocery store staples is the rotisserie chicken.  From burritos to soups to pastas, this juicy chicken is a versatile and affordable ingredient.  My favorite use for these delicious birds is my nearly fat free chicken salad.  The perfect blend of sweet and savory, this chicken salad is laced with dried cranberries and a hint of honey.


Tip:  Save the carcass and place in a large pot with enough water to cover.  Let simmer for 4-8 hours and strain bones and skin using a colander for homemade chicken stock.

  • 1 rotisserie chicken
  • 1/3 cup of red onion
  • 12 oz of fat free honey Greek yogurt
  • 1/2 cup of grated Parmesan cheese (the kind that resembles saw dust, trust me, its the best in this recipe)
  • 1/3 cup of dried cranberries

  • Place the red onion in a food processor and finely mince the onion
  • Remove the skin from the chicken and pick the chicken off the bone and place in a large mixing bowl (this is the tedious part, but its worth it)
  • Add cranberries, onion, Greek yogurt, and Parmesan cheese to the chicken
  • Mix all ingredients and salt and pepper to taste
