Greek Style Chicken Burgers

Tan shoulders exposed in the sun, brightly polished toes peaking through flip flops, and oversized sunglasses against freckled cheeks.  Summer has arrived and I could not be more happy for long days spent on the beach, scenic runs along the town marinas, and cookouts with friends. What is a cookout without freshly grilled burgers; I think it is safe to say burgers are the designated food of summer. I think I would seriously give anything to spend each night for the rest of my life outside with my outdoor torches ignited, surrounded by friends, with my toes sunk in the grass and a grill infront of me.

Ingredients

  • Greek Burgers (Serves 4)
  • 1 lb. of lean ground chicken breast
  • 2 egg whites
  • 1 tbsp of fresh lemon juice
  • 1 tbsp. of garlic powder
  • 1 tbsp. of fresh, finely chopped basil
  • 1/2 tbsp. of dried oregano
  • 1/2 cup of feta cheese
  • 1/4 cup of kalamata olives
  • 1/4 of a medium red onion
  • 1 tsp. of salt
  • 1/2 tsp. of pepper
  • 4 whole wheat pitas
  • Optional lettuce, tomatoes, red onion, and thinly sliced cucumber for topping
  • Tzatiziki Sauce:
  • 6 oz of fat free, plain Greek yogurt
  • 1 medium cucumber, peeled
  • 1 tbsp. of olive oil
  • 1 tbsp. of fresh lemon juice
  • Servings: 4
  • Difficulty: easy

Directions

  • In a large mixing bowl, combine lemon juice, garlic powder, feta cheese, egg, salt and pepper
  • In a food processor combine basil, oregano, kalamata olives, and red onion until finely minced and blended
  • Add the olive, onion, and herb mixture to the ground chicken
  • Divide into fourths and form patties
  • Over a medium, high flame grill the chicken until it reaches an internal temperature of 160 degrees
  •  Slice the pitas in half and place on the grill to lightly toast on each side
  • While burgers are cooking place the ingredients for the tzaitziki sauce in a blender until blended into a thick, yogurt
  • Spread the tzaitziki on the grilled pita and place the burger atop, top with desired toppings and remaining half of the pita
