Orecchiette with Sausage and Mixed Greens

One of my favorite guilty pleasures involves cooking barefoot in my tiny apartment kitchen.  A night of barefooted cooking could not be complete without my favorite “Hello Kitty” pajama bottoms (I’m a nerd like that) and my boyfriend, Luke Bryan (a girl can dream) seranading me in the background.  Add a glass of pinot and a summer thunderstorm roaring in the background and talk about a happy girl.  While this equation for a perfect night in does not happen very often, I was graced with a quiet night hunkered in my apartment, “Hello Kitty” pajamas and all!

After spending far too long debating exactly what I was craving for dinner, I decided to incorporate fresh seasonal produce with rich, hearty flavors to create a dinner worthy of a cozy night in.  I was pretty excited when I had discovered whole wheat Orchichette (Italian to English translation:  “little ears”) at the grocery store.  These cute little ear shaped pastas are perfect for a hearty sauce and the perfect addition to my dinner.  With my windows open and the drizzle of rain outside I snuggled up on my couch with a hearty bowl of pasta and a “Sex and the City” martathon.

Ingredients

  • 1 tbsp. of olive oil
  • 1 tsp. of minced garlic
  • whole wheat orecchiette
  • 1 Italian sausage patty
  • 1 medium roma tomato
  • 2 cups of mixed salad greens
  • Parmesan cheese to garnish
  • Servings: 2
  • Difficulty: easy

Directions

  • Cook the pasta according to package directions
  • While the pasta cooks, heat the olive oil over medium heat
  • Add the garlic to the olive oil, once fragrant, add the sausage, breaking it up with a spoon into small pieces
  • Once thoroughly cooked through, add the tomatoes and cook for 2 minutes, until warm and tender
  • Add the cooked pasta and toss with the mixed greens
  • Top with grated Parmesan cheese
