Shrimp Scampi


Last night, a friend texted me looking for an easy date-night-dinner that would easily impress a guy.  Her only request:  it had to involve shrimp, which was already in her freezer.  (I later found out she had never eaten shrimp before…shocking!)  I decided to reinvent an old favorite, shrimp scampi, to hopefully knock the socks off of her and her man.  This easy recipe takes only a few minutes to prepare which makes it ideal for just about any date because you are left with more time to spend with each other, isn’t this the point of a date anyway?   And even if the date is not the complete success you were hoping for; at least there are some incredible leftovers to look forward too.


*tip: take the tails off the shrimp to avoid any awkward dining moments!

  • 1 cup of uncooked, whole wheat pasta
  • 1 tbsp of olive oil
  • 4 tsp of minced garlic
  • 1/4 tsp of red pepper flakes
  • 2 tbsp of fresh or dried basil
  • 1/3 cup of dry white wine
  • 1/2 lb of frozen deveined and cooked shrimp
  • 2 cups of cherry tomatoes
  • 1/4 cup of grated Parmesan cheese
  • Servings: 2

  • Cook the pasta according to package instructions
  • While the pasta is cooking, thaw the shrimp by running cold (not hot) water over it while it sits in a colander
  • Once shrimp is thawed, remove the tails
  • Heat a large cooking skillet over medium heat and add the olive oil
  • Saute the garlic, crushed red pepper flakes and basil in the olive oil
  • Add the white wine and let simmer for 2 minutes
  • Add the shrimp and tomatoes and let simmer for 5-8 minutes
  • Toss the shrimp with the pasta and Parmsean cheese and serve
