Buffalo Chicken Meatballs

Summer is winding down, Jordyn is officially a 7th grader and Kaley, a college freshman, crazy how time flies! For the first time in 17 years that my stomach isn’t filled with back-to-school butterflies.  It is a bittersweet feeling knowing that my days of shopping for school supplies, finding the perfect “first-day” outfit, and adjusting to a new class schedule is all apart of my past (or at least until I decide to make the big move to grad school.)  For the first time in four years, I was able to send Jordyn off on her first day of school.  To my demise, this meant waking up a little too early on my day off, but I took the opportunity to get my run in while the weather was cool and of course pose for a few pictures before the baby of the family began her first day at a new middle school.  The post first day dinner was always a big one growing up.  Jordyn has a recent food obsession with anything related to buffalo chicken, from boneless wings, buffalo chips, rice, and pretzels, she loves it all.  I knew anything with a little lick of buffalo would be perfect end to her first day of school.
